What is sabudana kheer

Sabudana kheer is a traditional Indian dessert made with tapioca pearls, milk, sugar, and cardamom. It’s a creamy and delicious pudding often prepared during festivals or as a sweet treat.

Sabudana Kheer Recipe

Ingredients:

1/2 cup sabudana (tapioca pearls)

1 liter milk

1/2 cup sugar (adjust according to taste)

1/4 cup condensed milk (optional, for added richness)

1/2 teaspoon cardamom powder

A pinch of saffron strands (soaked in warm milk)

Chopped nuts for garnish (almonds, cashews, pistachios)

Instructions:

Wash the sabudana under running water until the water runs clear. Soak the sabudana in water for 4-5 hours or overnight.

In a heavy-bottomed pan, bring the milk to a boil. Keep stirring to prevent it from sticking to the bottom.

Once the milk is boiling, add the soaked sabudana. Cook on medium heat, stirring continuously to avoid lumps.

Simmer until the sabudana pearls become translucent, and the mixture thickens.

Add sugar and condensed milk (if using) to the kheer. Continue to cook until the sugar dissolves and the kheer reaches the desired consistency.

Add cardamom powder and saffron-soaked milk for flavor. Stir well.

Garnish with chopped nuts.

badam kheer Recipe

Ingredients:

1 cup almonds (soaked and peeled)

1 liter milk

1/2 cup sugar (adjust according to taste)

1/4 teaspoon cardamom powder

Saffron strands (optional)

Chopped nuts for garnish (pistachios, cashews)

Instructions:

Grind the soaked and peeled almonds into a smooth paste using a little milk.

Boil the remaining milk in a heavy-bottomed pan.Add the almond paste to the boiling milk, stirring continuously to avoid lumps.

Cook on low heat until the mixture thickens, stirring frequently.

Add sugar and continue to stir until it dissolves completely.

Add cardamom powder and saffron strands (if using) for flavor.

Continue cooking until the kheer reaches your desired consistency.

Remove from heat and let it cool.Garnish with chopped nuts.

Serve chilled or at room temperature.

Seviyan Kheer Recipe

Ingredients:

1 cup vermicelli (seviyan)

1 liter full-fat milk

1/2 cup sugar (adjust to taste)

1/4 cup ghee (clarified butter)

1/4 cup mixed dry fruits (almonds, cashews, raisins), chopped

1/2 teaspoon cardamom powder

A pinch of saffron strands (optional)

Instructions:

Heat ghee in a pan and roast vermicelli until it turns golden brown. Ensure you stir continuously to avoid burning.

In a separate pot, bring the milk to a boil. Once it starts boiling, reduce the heat to low and add the roasted vermicelli.

Let the vermicelli cook in the milk on low heat until it becomes soft and the milk thickens. Stir occasionally to prevent sticking.

Add sugar and mix well. Continue to cook until the kheer reaches your desired consistency.

In a small pan, lightly roast the chopped dry fruits until they become golden.

Add the roasted dry fruits, cardamom powder, and saffron strands (if using) to the kheer. Mix well.

Simmer for a few more minutes, allowing the flavors to blend.
