Take a small saucepan, heat the honey over low to medium-low heat. You don’t want it to boil; just warm it .

Let’s start by picking fresh dandelion blossoms from an area that hasn’t been treated with pesticides or herbicides. You’ll want to use just the yellow petals, so carefully separate them from the green base of the flower.

Wash the dandelion petals thoroughly under cold water to remove any dirt or bugs. Drain them well.

Take a large saucepan, combine the dandelion petals and 4 cups of water. If you’d like to add a citrusy note to your dandelion honey, you can also add the zest and juice of one lemon at this stage.
