4 orange roughy fillets (about 6 ounces each)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon lemon zest

2 tablespoons lemon juice

Salt and pepper to taste

1/4 cup all-purpose flour

1/4 cup breadcrumbs (you can use seasoned breadcrumbs for extra flavor)

2 tablespoons grated Parmesan cheese (optional)

2 tablespoons chopped fresh parsley

Lemon wedges for serving

Instructions:

Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil or cooking spray.

In a small bowl, mix together the olive oil, minced garlic, lemon zest, and lemon juice. Season with salt and pepper to taste.

In another shallow dish, combine the all-purpose flour with a pinch of salt and pepper.

In a third shallow dish, mix together the breadcrumbs, Parmesan cheese (if using), and chopped parsley.

Pat the orange roughy fillets dry with paper towels. Dredge each fillet in the flour mixture, shaking off any excess.

Dip the floured fillets into the olive oil mixture, coating both sides evenly.

Finally, coat the fillets in the breadcrumb mixture, pressing gently to adhere the crumbs to the fish.

Place the coated fillets in the prepared baking dish and bake in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.

Serve the baked orange roughy hot, garnished with lemon wedges for squeezing over the top.

Enjoy your delicious and flavorful orange roughy.
