Ingredients:

1 medium-sized pumpkin (about 3-4 lbs), peeled, seeded, and chopped into cube.

1 large onion, chopped

3 cloves of garlic, minced

2 medium carrots, peeled and chopped

2 stalks of celery, chopped

4 cups vegetable or chicken broth

1 cup coconut milk or heavy cream

2 tablespoons olive oil or butter

Salt and pepper to taste

Instructions:

Prepare the Ingredients:

Peel the pumpkin, remove the seeds, and chop it into cubes.Chop the onion, garlic, carrots, and celery.If using, toast the pumpkin seeds in a dry skillet until golden brown and set aside for garnish.
