Easy Shahi Paneer

Shahi paneer

Here’s a classic Shahi Paneer recipe, which is a creamy, mildly spiced, and slightly sweet North Indian dish featuring paneer (Indian cottage cheese) in a rich, royal sauce.

Ingredients

For the Paneer and Gravy

250 grams paneer (cubed)

2 tablespoons ghee or oil

1 large onion, chopped

2 large tomatoes, chopped

10-12 cashew nuts

1-inch ginger, chopped

3-4 garlic cloves, chopped

2-3 green cardamoms

1 bay leaf

1 small cinnamon stick

2 cloves

Spices

1 teaspoon cumin seeds

1/2 teaspoon turmeric powder

1 teaspoon coriander powder

1/2 teaspoon garam masala

1/2 teaspoon red chili powder (adjust to taste)

Salt to taste

For the Creamy Texture

1/2 cup fresh cream (or substitute with 1/4 cup thick yogurt)

1/2 cup milk

Fresh coriander leaves for garnish

Instructions

1. Prepare the Cashew Paste

Soak cashews in hot water for 15 minutes, then grind into a smooth paste and set aside.

2. Prepare the Paneer

Cut the paneer into cubes. Optionally, lightly pan-fry the cubes in a bit of ghee until golden for added flavor and texture.

3. Cook the Onion-Tomato Base

Heat ghee or oil in a pan over medium heat.

Add cumin seeds, bay leaf, cinnamon, cloves, and cardamoms. Sauté until fragrant.

Add onions and cook until golden brown.

Add ginger and garlic; cook until raw aroma goes away.

Add chopped tomatoes and cook until softened.

Let this mixture cool slightly, then blend into a smooth paste.

4. Cook the Gravy

Return the paste to the pan and add turmeric, coriander powder, and red chili powder. Cook for 5-7 minutes until the spices release their aroma.

Add the cashew paste and cook, stirring frequently, for another 5 minutes.

Slowly add milk and mix well to create a creamy sauce. Add salt to taste.

Add the paneer cubes, mixing gently to coat them in the sauce.

5. Finishing Touches

Stir in the cream or yogurt and garam masala.

Simmer for a few more minutes on low heat until the paneer absorbs the flavors and the gravy reaches your desired consistency.

6. Garnish and Serve

Garnish with fresh coriander leaves.

Serve hot with naan, roti, or rice.
