Chicken Malai Tikka Recipe

Ingredients:

500g boneless chicken pieces

1 cup hung curd (thick yogurt)

1/2 cup fresh cream

2 tablespoons grated paneer (optional)

1 tablespoon ginger-garlic paste

1 tablespoon chopped coriander leaves

1 tablespoon chopped mint leaves

1 tablespoon lemon juice

1 teaspoon garam masala

1 teaspoon white pepper powder

Salt to taste

Skewers for grilling

Butter for basting

Instructions:

Marination:

In a large bowl, mix hung curd, fresh cream, grated paneer, ginger-garlic paste, coriander leaves, mint leaves, lemon juice, garam masala, white pepper powder, and salt to taste.Add the boneless chicken pieces to this mixture, ensuring each piece is well-coated. Marinate for at least 2 hours, or preferably overnight in the refrigerator.

Preparation for Grilling:

Preheat your grill or oven to medium-high heat.If using skewers, thread the marinated chicken pieces onto them.

Grilling:

Place the skewers on the grill or in the oven.Cook for about 15-20 minutes, turning occasionally until the chicken is cooked through and has a nice char.

Basting:

During grilling, baste the chicken with melted butter at regular intervals. This adds flavor and keeps the chicken moist.

Serve:

Once the Chicken Malai Tikka is cooked, remove from the grill/oven.Garnish with additional chopped coriander and mint leaves.Serve hot with mint chutney and lemon wedges.

1 teaspoon cardamom powder

1 teaspoon cumin powder

1 tablespoon lemon juice

Salt to taste

2 tablespoons melted butter

Skewers for grilling

Instructions:

Marination:

In a large bowl, combine hung curd, fresh cream, ginger-garlic paste, white pepper powder, garam masala, cardamom powder, cumin powder, lemon juice, melted butter, and salt. Mix well to form a smooth marinade.

Prepare Chicken:

Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl and let it marinate in the refrigerator for at least 2-4 hours or overnight for better flavor absorption.

Skewering:

Preheat your grill or oven to medium-high heat. If you’re using wooden skewers, soak them in water for about 30 minutes to prevent them from burning.Thread the marinated chicken cubes onto the skewers.

Grilling:

Grill the skewers for about 15-20 minutes, turning occasionally to ensure even cooking. You can also cook them in an oven at 200°C (392°F) for 20-25 minutes or until the chicken is fully cooked and has a nice char.

Serve:

Once cooked, remove the skewers from the grill or oven.Garnish with a drizzle of fresh cream and chopped coriander.Serve hot with mint chutney and naan or rice.

Chicken Burger Recipe

Ingredients:

Ground chicken (about 1 pound)

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

1/4 cup finely chopped onion

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Burger buns

Lettuce, tomato, and your favorite toppings

Instructions:
