Ingredients:
4 boiled eggs
1 large onion, finely sliced
2 tomatoes, chopped
2 green chilies, slit
1 sprig curry leaves
1 tablespoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon garam masala
1/2 cup coconut milk
2 tablespoons coconut oil
Salt to taste

Instructions:
Heat coconut oil in a pan. Add sliced onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté until the raw smell disappears.
Add chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes are soft.
Add coconut milk and bring it to a gentle simmer.
Add boiled eggs, curry leaves, and garam masala. Simmer for 5-7 minutes, allowing the flavors to meld.
