Collaborating with Kerry Damskey, a renowned Californian winemaker, Samant set up the first winery in Nashik.

Initially, Sula introduced just two varietals: Sauvignon Blanc and Chenin Blanc. Over the years, it expanded its portfolio to include reds, whites, sparkling wines, and rosés. Today, Sula produces popular wines like Sula Dindori Reserve Shiraz, Sula Brut, and Sula Zinfandel, and it exports to over 30 countries worldwide.

In addition to crafting high-quality wines, Sula has also played a significant role in promoting wine tourism in India. Its sprawling estate offers guided vineyard tours, wine tastings, and a stay at their luxurious resort, Beyond by Sula. Ingredients:

Grapes (red or white, depending on the type of wine you want to make) – 2-3 kg

Sugar – 1-1.5 kg (adjust based on the sweetness of the grapes)

Wine yeast – 1 packet (available at brewing supply stores)

Water – 1-2 liters

Campden tablets (optional) – to sterilize the must

Fermentation vessel (glass or food-grade plastic)

Airlock – to prevent contamination during fermentation

Instructions:

Step 1: Prepare the Grapes

Wash the grapes thoroughly to remove dirt and pesticides.

De-stem and crush the grapes using a sanitized crusher or your hands.

Place the crushed grapes into a sanitized fermentation vessel.

Step 2: Sterilize the Must

Add Campden tablets (if using) to the crushed grape mixture. This kills any wild yeast or bacteria.

Let the mixture sit for 24 hours before adding the wine yeast.

Step 3: Add Yeast and Sugar

Dissolve sugar in warm water and add it to the fermentation vessel.

Sprinkle the wine yeast over the mixture and stir gently.

Step 4: Primary Fermentation

Cover the fermentation vessel with a clean cloth or lid with an airlock.

Allow the mixture to ferment for 5-7 days at a temperature of 20-25°C, stirring daily.

Step 5: Secondary Fermentation

Strain the liquid from the grape solids into a clean fermentation vessel using a sanitized strainer or siphon.

Attach the airlock to the vessel to prevent contamination.

Let the wine ferment for 3-4 weeks in a cool, dark place.

Step 6: Bottling

Once fermentation has stopped (no bubbles in the airlock), siphon the wine into sanitized bottles, avoiding the sediment at the bottom.

Cork the bottles tightly and store them horizontally.

Step 7: Aging

Age the wine for at least 3-6 months in a cool, dark place for improved flavor.

Tips:

Monitor the fermentation process using a hydrometer to check sugar levels.
