The sheep meat which to above one year old is called mutton. The younger sheep meat called lamb. Compare to lamb mutton has strong flavour. Mutton meat to used in different types of food in all over world. motton is cooked as roasting, currying, stewing, grilling etc.
Now we learn some recipes of mutton.
lets start Mutton Biryani.
Mutton Biryani:
Lets start making Famous mutton biryani.
Ingredients:
● 1kg mutton (cut)
● 4 cup basmati rice
● 4 onion (sliced)
● 4 tomatoes (chopped)
● Salt (as required)
● oil as required
● 8 cup water
● 1/2 cup milk
● Few strands of Saffron
● I tsp garam masala powder
● 2 tsp Coriander powder
● 2 tsp cumin powder
● 2 tsp red chilli powder
● 1/2 tsp turmeric powder
● 2 tablespoon biryani masala
● 2 cup yogurt
● 2 tablespoon ginger garlic paste
● 2 tablespoon lemon juice
● 3 cloves
● 3 cardamom
● 1 Cinnamon stick
● 1 tsp shah zeera
● 2 green chilies
● 1 cup coriander leaves
● 1 cup mint leaves
Instructions
1.First of all wash basmati rice in a running water & then Soak it For atleast 1 hour.
2.Next wash mutton properly.
3. add washed mutton in a large bowl.
4.Add ginger garlic paste, turmeric powder, biryani masala, red chilli powder, cumin powder, Coriander powder, garam masala powder, salt, lemon juice mix well.
5.Rest this marination atleast 4-6 hour .
6.After that take a pan put on flame.
7.Add oil when oil become hot add cloves, Cardamom, Cinnamon & shah jeera Saute it.
8.After that add onion & fry it .when onion become golden brown then remove some fried onion for garnish.
9.Next add tomatoes when tomatoes cooked well.
10. Add marinated mutton add yogurt mix well.
11.add water & cook mutton till it become soft.
12.Now take another pan put on flame add water & salt.
13. When boil comes on water. Drain basmati rice water and add it on boiling water.
14. Cook 80% basmati rice, drain water & keep aside.
15. When mutton become soft add green chilies, mint leaves & coriander leaves mix well.
16. On top of mutton mixture add cooked basmati rice.
17. On top of basmati rice add fried onion & coriander leaves.
18. Take a small bowl add milk and saffron milk well put saffron milk on rice and cover the lid.
19. Cook on low flame 10-15 minutes or until mutton mixture become dry.
20. Turn off flame and Rest it 15_20 minutes.
21. Mutton Biryani is ready serve with raita and salad.
Mutton Curry
Lets start Ingredients making mutton curry recipe in a easy way.
Ingredients
● 1kg mutton (cut)
● 4 tomatoes (puree)~
● 3 onion (chopped)
● Salt(as required)
● 4 tablespoon ginger garlic paste
● 1/2 tsp turmeric powder
● 3 tablespoon red chilli powder
● 4 tablespoon oil
● I cup yogurt
● 2 tsp garam masala, Powder
● I tsp cumin powder
● 2 tablespoon Corvander Powder
● 4 green chillies
● Coriander leaves (chopped).
To make paste:
● 4 tsp fennel seeds,
● 2 tsp cumin seed’s
● 2 Cinnamon stick
● 8 green Cardamom pods
● 8 cloves
Instructions
1.first take a pan add fennel seeds, Cumin Seeds, Cinnamon stick, green Cardamom pods & cloves, dry roast it .
2.Then add roasted cloves, green Cardamom pods, Cinnamon stick, Cumin seeds & fennel seeds in grinder & make a fine paste.
3 .Now take another pan put on flame.
4.Add oil when oil become hot add chopped onion when onion become golden brown.
5.add tomatoes puree mix well –
6.Next wash mutton properly, Cut in pieces.
7.Now add ginger garlic paste turmeric powder red chilli powder, salt, cumin powder, Coriander powder, garam masala powder mix we’ll.
8.Saute it 2-3 minutes or until Cook oil separate.
9.then add water cover lid untel mutton become soft.
10.then add grounded pine paste.
11. take a bowl add yogurt in pan.
12.Add green chilies & coriander leaves.
13.Cover lid add water to adjust consistency.
14.when mutton cooked & masala thicks.
15.Turn off flame
16. Serve mutton curry with Naan, rice, or chapati.
Mutton Rogan Josh Recipe

Ingredients:
● 5oogms mutton (cut)
● Salt (as required)
● 1/2 cup tomato puree
● 1/2 tsp kashmiri chilli
● 1 inch Cinnamon stick
● 2-3 cloves
● 1 black cardamom Pods
● 2-3 green Cardamom pods
● I tsp ground cumin
● I tsp ground fennel seeds
● 1/2 tsp turmeric powder
● 1 tsp red chilli powder
● 2 tsp ginger garlic paste
● 2 tablespoon vegetable oil
● I large onion (chopped)
● Coriander leaves (as required)
Instructions
1.First take a pan put on flame add oil .
2. when oil become hot add cinnamon stick, cloves, black Cardamom pods, green cardamom pods saute it.
3.then add chopped onion, when onion become golden brown add tomato puree.
4.Now wash mutton properly take a pan put on flame.
5.Now add ground cumin, ground fennel seeds, turmeric powder, red chilli powder, ginger garlic paste mix it well.
6.saute it until oil separate then add water.
7. Take a bowl add yogurt & whisk it.
8. Add whisked yogurt in pan & also add salt.
9. Add kashmiri red chilli powder, coriander leaves mix well.
10. Add water to adjust consistency cover with lid.
11. Cook mutton until mutton become soft & gray become thick.

Mutton korma

Ingredients
● 4 bay leaf
● 6_8 cloves
● 6_8 green cardamom pods
● 2 Cinnamon stick
● Salt as required
8 tablespoon oil or ghee
● 2 tsp garam masala powder
● 2 tsp cumin powder
● 2 tsp coriander powder
● 2 tsp red chilli powder
● 1 tsp turmeric powder
● 2 cup yogurt
● 4 tablespoon ginger garlic paste
● 4 larg onion Chopped
● 1 ksg mutton ( cut)
● Coriander leaves ( as required)
● 4 tablespoon Coconut powder
Instructions
1.First take a pan put on flame Add oil when oil become hot.
2. Add bay leaf, leaves, cloves, green cardamom pods, Cinnamon stick saute it.
3. Now add onion when onion change its color add washed mutton.
4. Add ginger garlic paste, turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder, & salt mix well.
5. When oil separate from masala add water.
6. Cover with lid, cook until mutton become soft.
7. After that whisk curd & add it in mutton.
8. Add coconut powder & coriander leaves.
9. Cover with lid and cook 10-15 minutes.
10. When mutton cooked & masala become thick.
11. Turn off flame mutton korma is ready serve with Naan rice.
Mutton chops Recipe
Let’s start making mutton chops recipe
Ingredients
● 10-12 motton chops
● 4 tsp lemon juice
Salt as required
● 2 tsp garam masala powder
● 2 tsp coriander powder
● tsp cumin powder
● 1/2 tsp turmeric powder
● 2 tsp red chilli powder
● 4 Tspn ginger garlic paste
● 2 cup yogurt
● coriander leaves as required
Instructions
1. First of all take a mixing bowl add yogurt, ginger garlic paste, red chilli powder, turmeric powder, cumin powder, Coriander powder, garam masala powder, salt and lemon juice mix well.
2. For marination now take mutton chops wash it properly.
3. Add mutton chops in marination cover it & keep this in refrigerator 4_6 hours minimum.
4. You can keep overnight for best results.
5. Next Preheat oven or grill.
6. Add oil on grill or you can make it in skillet.
7. To grill after adding oil put mutton chops.
8. When mutton chops become golden brown remove it.
9.Turn on flame put skillet add oil when oil become hot add mutton chop.
10. When mutton chop become golden brown remove it in a pepper towel.
11. Garnish with coriander leaves.
12. Mutton chop is ready serve with Naan, bread or rice.
Mutton masala Recipe
Let’s start making mutton masala
To make masala
● 4 tablespoon oil
● salt as required
● 2 tsp garam masala powder
● 2 tsp coriander powder
● 2 tsp red chilli powder
● 1 inch cinnamon stick
● 5_6 Cloves
● 5_6 green cardamom pods
● 2 bay leaf
● 2 tsp cumin seed
● 2-3 green chilies chopped
● 2 tablespoon ginger garlic paste
● 2 onion Chopped
● 3 tomatoes chopped
To make marination
● 1 kgs mutton (cut into pieces)
● 2 cup yogurt
● 2 tablespoon ginger garlic paste
● 1/2 tsp turmeric powder
● tsp red chilli powder
● salt as required
● 2 tsp garam masala powder
Instructions
1.First of all wash mutton properly.
2. After that take Big bowl add washed mutton.
3. Add salt, garam masala powder, red chilli powder, turmeric powder, ginger garlic paste & curd mix well.
4. Cover with lid & put this bowl in refrigerator 4_6 hours for marination.
5. Turn on flame put pan on flame add oil when oil become hot add cloves, cinnamon, cardamom, bay leaf & cumin seeds saute it.
6. After that add onion when onion change it’s color add tomatoes.
7. Cook tomatoes until it become soft.
8. Than add ginger garlic paste, red chilli powder, cumin powder, Coriander powder, turmeric powder, garam masala powder & salt mix well.
9. Now add marinated mutton in it mix well.
10. Add green chilies & coriander leaves saute mutton with masala 2_5 minutes.
11.when oil separates add water cover lid.
12. Cook until mutton become soft.
13. When masala reach your desired consistency.
14. Turn off flame.
15. Mutton masala is ready serve with Naan or rice.
