Ingredients:
- 1 kg mutton, washed and drained
- 2 cups basmati rice, soaked for 30 minutes
- 4 onions, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup plain yogurt
- 1/4 cup cooking oil or ghee
- 2 tablespoons ginger-garlic paste
- 1/2 cup chopped mint leaves
- 1/2 cup chopped coriander leaves
- 4 green chilies, slit
- Whole spices: 2 bay leaves, 4 green cardamom pods, 4 cloves, 2-inch cinnamon stick
- Biryani masala: 1 teaspoon cumin powder, 1 teaspoon coriander powder, 1 teaspoon red chili powder, 1/2 teaspoon turmeric powder, 1/2 teaspoon garam masala
- Salt to taste
- Saffron strands soaked in warm milk (optional)
Instructions:
- Heat oil or ghee in a large pot. Add sliced onions and fry until golden brown. Remove half for garnishing.
- Add whole spices to the pot. Add ginger-garlic paste and sauté until the raw smell disappears.
- Add chopped tomatoes, biryani masala, and cook until the tomatoes are soft.
- Add mutton and yogurt. Cook until the mutton is browned.
- Add mint, coriander leaves, green chilies, and salt. Mix well.
- In a separate pot, parboil the soaked rice with a pinch of salt until it’s 70% cooked. Drain the water.
- Layer the partially cooked rice over the mutton mixture. Sprinkle fried onions, mint, and coriander leaves. Optionally, add saffron milk.
- Cover tightly with a lid and cook on low heat for 25-30 minutes until the rice is fully cooked and mutton is tender.
- Gently mix the layers before serving.

Ingredients:
500g mutton, cut into pieces
2 large onions, finely sliced
3 tomatoes, pureed
1/4 cup yogurt
1/4 cup oil or ghee
2 tsp ginger-garlic paste
2 tsp Rogan Josh spice blend (coriander, cumin, cinnamon, cardamom, cloves)
1 tsp red chili powder
1/2 tsp turmeric powder
Salt to taste
Fresh coriander leaves for garnish
Instructions:
1.Heat oil/ghee in a pan and sauté sliced onions until golden brown.
2.Add ginger-garlic paste and cook until the raw smell disappears.
3.Add mutton pieces and brown them on all sides.
4.Mix in Rogan Josh spice blend, red chili powder, turmeric powder, and salt.
5.Stir in tomato puree and cook until the oil separates from the masala.
6.Add yogurt and cook on low heat until the meat is tender.
7.Garnish with fresh coriander leaves before serving.

leg of mutton sleeve recipe
Ingredients:
▪︎2 large mutton sleeves
▪︎1 cup olive oil
▪︎4 cloves garlic, minced
▪︎1 tablespoon rosemary, chopped
▪︎1 tablespoon thyme, chopped
▪︎Salt and pepper to taste
Instructions:
1.Preheat the oven to 350°F (175°C).
2. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper.
3.Place the mutton sleeves in a roasting pan. Using a brush, generously coat the sleeves with the prepared olive oil mixture.
4.Cover the roasting pan with foil and bake in the preheated oven for about 2 hours or until the mutton sleeves are tender.
5.Remove the foil during the last 30 minutes of cooking to allow the sleeves to brown.
6.Once cooked, let the mutton sleeves rest for a few minutes before slicing.
7.Serve the leg of mutton sleeves with your favorite sides and enjoy.
